Family Recipes: Dedrick Russell’s Egg Nog Cake
CHARLOTTE, N.C. (WBTV) - Dedrick Russell’s egg nog cake is so delicious, his daughter bought him a Kitchen Aid mixer so he would keep baking. Perhaps more entertaining than the beauty of the cake is watching Dedrick crack eggs into the mixer. It’s a must-watch.
Egg Nog Cake Recipe
1 (18.25 oz) Yellow Cake Mix
1 (3.4 oz) French Vanilla Instant Pudding Mix
¾ cup of EggNog
¾ cup of Vegetable oil
4 large eggs
½ Teaspoon of Ground Nutmeg
Powdered Sugar
Heat oven to 350 degrees. Combine cake mix, pudding, eggnog, and oil in a large mixing bowl until moistened. Add eggs. I do it one egg at a time to ensure eggs are mixed well in the batter. Then you add nutmeg. Beat on medium speed for about 4 minutes. Lightly grease cake pan – I use a Bundt cake pan. Pour batter into pan. Bake 40-50 minutes or until a toothpick inserted near center comes out clean. Cool for about 10 minutes – remove from pan – Make sure cake is cooled completely before sprinkling powdered sugar all over the cake. Slice and enjoy!
