Low Budget Potato Grass Fed Ground Beef Pan Roast
Serves 6
Potatoes
3 organic russet potatoes diced in ¼" cubes
1 organic onion
1 bay leaf
1 T chopped garlic
1# local grass fed ground beef
12 oz organic spinach, chard or kale
½ # frozen organic corn
5 T olive oil
2 sprigs fresh rosemary
5 T water or stock
3 local farm raised eggs
Brown potatoes in 3 T olive oil. Season with salt and pepper. When potatoes are brown remove from the pan. Add beef and cook till done. Remove and drain fat. Add onion to the pan. Cook to soften and stir to remove and residue on the pan. Add garlic, rosemary, corn, beef and potatoes back to the pan with remaining olive oil. Re-heat add water. Remove the rosemary and stir in spinach. Lightly beat the eggs and stir in. cook until egg is set constantly stirring. Serve and Enjoy!!!!!
