Sonoma's Sweet Potato Apple Gratin

Serves 6

8x8 casserole dish

2 large sweet potatoes, peeled

1 small red onion

2 Granny Smith apples, peeled

1 cup orange juice

pinch ground nutmeg

pinch ground cinnamon

pinch ground cloves

pinch ground allspice

1 Tbsp chopped parsley

1 Tbsp chopped Rosemary

1/2 pound of sliced Fontina or Provolone cheese

With a mandolin or sharp knife slice potatoes, apple, and onion into a bowl.  Place 1/2 sliced onion in bottom of casserole dish.  Mix all other ingredients together, season with salt.  Spread into casserole dish, cover with cheese and bake at 350 degrees until gold and potatoes are tender.  If the cheese browns, cover with aluminum foil and bake to finish.  Enjoy!
