Stuffed Grilled Pizza
Serves 6
Pizza Dough
1 cup + 2 T all-purpose flour
1 cup + 2 T bread flour
pinch salt
1 ½ tsp instant yeast
1 tsp honey
1 T olive oil
¾ cup water
In a mixer mix dry ingredients. Add honey, oil, and water. Mix on low speed for 3 minutes. Let rest 5 minutes. Mix on medium for 30 seconds. remove dough onto an oiled surface. Divide into 6 pieces. Form them into a ball. Place on an oiled pan far enough apart that they will not touch after rising. Store in the refrigerator 6 - 24 hours. (You can make the dough and form into ball and let rise at room temperature until doubled in size and then make pizzas.) Pull dough to room temperature 1 hr before needed. Press out on a floured surface. Roll on your fingers to form a 6" circle. Place your favorite cheese, vegetables or condiments in a small pile in the center. Fold dough over to close. Roll edges to seal.
To Grill - brush hot grill with oil and brush pizza with oil. place flat side onto hot grill over medium high heat. Move ¼ turn when dough sets. When crisp flip pizza and repeat. Move to just off the heat and cover grill for 1 minute to heat the center. You can grill and then reheat in the oven.
To Bake - preheat oven to 450* (use convection if capable). Place pizza on an oiled baking dish. Bake for 10 - 15 minutes. Until golden.
