Organic Summer Squash Melon Salad
with shaved proscuitto
Serves 6
¾ # local organic zucchini or squash sliced
2 T olive oil
¼ cantaloupe cut in ¾" dice
¼ water melon cut in ¾" dice
¼ honeydew melon cut in ¾" dice
¼ red onion sliced thin
3 T extra virgin olive oil
2 T orange juice
1 T lime juice
1 T chopped parsley
1 T chopped rosemary
6 oz very thin sliced proscuitto
3 oz goat cheese you can use cheeses like parmesan instead)
Slice squash on a bias. Toss with olive oil, a small pinch of both herbs, salt and pepper. Grill until tender over medium heat. Let cool to room temperature for 10 minutes. Toss squash with melons (and any juice from them) juices, herbs and onion. Divide on plates. garnish with proscuitto and goat cheese. Serve and Enjoy!!!!!
