Crab Stuffed Tigerella New Town Farm Tomatoes
¼ # lump crab picked free of shells
2 T softened cream cheese
1 tsp milk
1 tsp chiffonade parsley
1 tsp chiffonade basil
1 tsp or more chili paste (how hot do you like it)
1 ½ tsp mayonnaise
1 tsp chopped shallots
1 tsp chopped garlic
1 tsp olive oil
salt and pepper
In a small pan soften shallots & garlic in olive oil. Cool. Mix all ingredients, except crab, until smooth. Fold in crab careful not crush crab.
9 tigerella tomatoes available at the Matthews Farmers Market
cut tomatoes in ½. Pull out seeds whole and reserve. Carefully stuff with crab. Place seed innards on top. Garnish with small basil leaves. Serve family style or on a plate. Enjoy!!!!!
You can use Green Zebra, Juane Flame or large cherry tomatoes instead of the Tigerella.
