Lobster Organic New Town Farm Potato Salad
Serves 4
1 1.25 lobsters
Separate lobster tails & claws. Cook tails 1 min in boiling water. Cook claws 3 min in boiling water. Cool in ice water. Remove from shell. Cut tails into 1"x 1/8" strips.
Potatoes
2 cups fingerling potatoes
3 sprigs rosemary
2 T olive oil
Wash potatoes very well. Toss in oil, herbs and season with salt and pepper. Roast in a 350* oven tossing every 5 - 10 minutes. The potatoes are done when a knife goes into the center with no resistance. Let potatoes cool. If large cut in ½.
Dressing
1 egg yolk water
¾ cup pure olive oil salt & pepper
1 clove garlic chopped fine ¼ tsp chopped rosemary
