Crab Salpicon

Yield: 10 Tacos

INGREDIENTS

10oz       Jumbo Lump Crab

2cups     Lettuce, shredded

3cups     Cabbage, shredded

1cup       Tomatoes, diced

1cup       White onion, thinly sliced

1cup       Red onion, thinly sliced

4T            Radish, sliced

4T            Green onion, sliced

2T            Extra Virgin olive oil

12           Garlic cloves, thinly sliced

2              Avocados, pitted, peeled and small dice

4pnchs   Salt

10           Corn Tortillas, warm

Juice of Two Limes

METHOD

In a large mixing bowl combine all ingredients except for crab meat and tortillas.  Combine and mix thoroughly and taste.  Adjust seasoning as needed.  Add crab and toss gently to incorporate crab.  Take tortilla and fill with 1/3 cup of mixture and serve as a taco.
