Mojo Bay Mojito


3 lime quarters

6-8 spearmint leaves

1.5 oz Limon flavored light rum

Guarapo (sugar cane juice) or substitute simple syrup (sugar water - 1 part water, 1 part sugar)

Club Soda

Crushed Ice

Muddle mint leaves and 3 lime quarters at the bottom of a tall glass.
Fill the glass with ice.
Add rum.
Fill the remainder of glass with Guarapo or sugar water, leaving ½ inch at top of glass
Cover the glass and shake vigorously for 4-5 seconds. Top off with club soda. Serve with straw. Garnish with lime wedge and sugar cane stick or stirrer.
