Seared Jumbo Sea Scallop Watermelon Seviches
Serves 4

½ # jumbo sea scallops (approximately 8)
2 T olive oil
1 tsp chopped tarragon
Sear scallops in a hot pan with oil. Remove scallops & slice thin. Toss with tarragon & 2 T watermelon juice. Let stand 10 minutes.

Watermelon
1 cup diced watermelon (different colors look great)
1 T orange juice
2 tsp lime juice
½ jalapeno brunoise
1 tsp minced red onion
1 T chiffonade basil
Mix & let marinate 1 hour.

Assemble
Shingle scallops on plates. Spoon watermelon over the top. Drizzle with some juice & E.V.O. Serve and Enjoy!!!!!
