Catalina Flatbread: with carmelized Onions, anchovies, roasted peppers, olives and Manchego cheese.
Caramelized Onions:
2 tbsp olive oil
3 cups Vadalia or Spanish onions, peeled, halved and thinly sliced

1. Heat oil and butter in a large pan over medium heat.
2. Add the onions and cook slowly until deep golden brown, stirring occasionally.
3. Remove from the heat season to taste.
Putting it together:
4 each Good-quality pita bread, naan, lavash, or Buckwheat Flatbread,
1 cup Caramelized Onions, see above
½ cup Piquillo Peppers Roasted, peeled and cup julienne
½ cup Nicoise olives, pitted and minced
4 oz Spanish white anchovies or Sardines
4 oz Manchego Cheese grated
1 sprig Fresh Thyme
1. Spread each flatbread with olive pasta,
2. Top with the caramelized onions, peppers, and anchovies.
3. Heat in a 325F oven for 4-6 minutes, until the cheese is melted. Garnish with fresh thyme leaves. Cut into wedges and serve.
