Fancy Shepard's Pie
Serves 4
Beef
2 # ny strip or sirloin
2 T olive oil
½ onion fine dice
1 carrot fine dice
2 cloves garlic chopped
½ T flour
3 T red wine
6 piece asparagus or 12 haricot vert cooked & chopped fine
2 large Idaho potatoes made into mashed potatoes
Heat a pan just large enough to fit the beef. Add oil and sear seasoned beef. Cook to desired temperature. Remove and add vegetables. Cook until softened. Add flour and cook 2 minutes. Add red wine and cook 1 minute. Add stock. Simmer to thicken.
Assemble
Heat sauce, potatoes, and meat. Slice meat thin. Arrange in a mold or free form. Spoon vegetables and sauce over the top. Cover with about a ¼" or potatoes. If you have a torch burn the top (this is not necessary). Serve and Enjoy!!!!!
