Drunken Caramel Apple Walnut Cake
Serves 9
Cake
1 ½ cup apples peeled, cored and chopped
1 cup sugar
2 eggs
¼ cup vegetable oil
1 tsp vanilla
1 cup flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
¾ cup chopped walnuts
Mix apples and sugar. In a separate bowl whisk the eggs, oil and vanilla. Combine the flour, cinnamon, salt and baking soda. Add to egg mixture. Fold in nuts. Pour into grease 9 x 9 pan. Bake at 350* for 30 minutes or until cake bounces bake when touched. Cool 10 minutes the remove from the pan. When cool cut in 9 squares and pour caramel over the top and let soak for 10 minutes. Serve with chopped candied walnuts an a scoop of ice cream. Enjoy!!!!!
Caramel
1 cup sugar
¼ cup water
2 T butter
¾ cream
¼ cup calvados or brandy
Mix water and sugar in a deep pot. Bring to a boil, then turn to a fast simmer. Cook until amber. Carefully add butter. Sugar is very hot and will splatter. Add liquor and cream slowly. The sugar will rise in the pot. When all the liquid is added, stir and bring back to one boil. Let cool slightly, and pour over the cake. If too thick add a little cream. If cooled to much warm in microwave.
