Apple Smoked Bacon Braised Brussel Sprouts
Serves 6
1 # brussel sprouts cut in ½
1/3 # apple smoked bacon cut in 1/8" strips crosswise
½ onion diced
½ fennel bulb diced
1 T chopped garlic
1 T pepper flake
½ cup white wine
3 cups chicken stock
salt and pepper
4 T butter
1 T chopped parsley
½ T chopped savory
Render bacon in a medium size pot, until crisp. Add onion & fennel. Cook until tender. Add garlic & flake. Cook 30 seconds. Add sprouts & stir. Add wine & cook for 3 minutes. Add stock & a little seasoning. Simmer until sprouts are tender. About 15 minutes. Cool if preparing a head of time or add butter & herbs. Season. Serve as side dish for the holidays, with seafood or braised meats. Enjoy!!!!!
