Espresso Sweet Spice Crusted Beef
Pomegranate A-1
Serves 3-4
A-1
1 bay leaf
1 serrano chilies sliced
1 head garlic cut in half
1 cup pomegranate juice
1/2 cup beer
2 T pineapple juice
2 T champagne vinegar
1 T tomato paste
2 T molasses 1 T soy
1 T lime juice 1 T bourbon
1 cloves 1 T tamarind paste
1/4 tsp. Cumin 1/2 cup port wine
1 tsp black pepper
In a non-reactive sauce pot mix all ingredients except wine and reduce by ¼. Add wine and reduce by ½. Strain and cool in ice bath.
Crust
3 T ground espresso or coffee
1 ½ T ground coriander seed
1 ½ T ground fennel seed
Combine.
Assemble
1 # flank steak
Rub espresso on the steak. Cook in a broiler, a sauté pan or on the grill (drizzle with olive oil first). When cook (to your desired temperature) slice thin. Spread out on a platter. Garnish with a salad of roasted beets and arugula. Serve A-1 on the side. Enjoy!!!!!
