Portobello
8 portobello caps
4 T balsamic vinegar
1 clove garlic sliced
2 T olive oil
Toss altogether. Marinate 2 hours minimum. Season and grill over medium heat. Cool and slice.
Sausage and Onions
6 Italian Sausage
2 onions sliced
Grill sausages until done. Cook onions on a rack over a grill or caramelize in a pan.
Assemble
¼ cup chiffonade basil
2 # fresh mozzarella
In an ovenproof dish alternate slices of sausage and portobello. Use all to fill the pan. Mix the onions with the basil. Spread over the mushroom and sausage. Layer ¾ of the cheese on top. Bake at 500* to heat and melt cheese. Mix remaining cheese with arugula and pile in center of casserole. Serve and Enjoy.
