Lamb
12 5 oz rib chops or loin chops
3 T olive oil
1 tsp Dijon mustard
1 tsp chopped garlic
1 tsp chopped oregano
1 tsp cracked black pepper
Mix all ingredients. Rub on lamb. Let marinate 1 hour.
Okra
2 cups Okra, cleaned & cut oblique
2 cups Heirloom Tomato, chopped
1 Onion, brunoise
2 ribs Celery, brunoise
1 T chopped garlic
1 pinch Saffron
S&P
6 T olive oil
3 T chiffonade basil
Caramelize okra in 2 T olive oil. Reserve. Cook onion celery in 4 T oil. When soft add saffron & garlic. Cook 1 minute. Add tomatoes and okra. Cook until soft & liquid is reduced by ½. When reheating add herbs & serve.
Assemble
Grill lamb to desired temperature. Heat okra and spoon over lamb. Serve and Enjoy!!!!!
