Molten Chocolate Cake for Mom!
Serves 4
3 oz semi sweet chocolate
5 oz bittersweet chocolate
4 oz + 1 ½ T butter
2/3 cup sugar
3 whole eggs
3 egg yolks
3T + 2 tsp flour
Melt chocolate and butter in microwave (melt for short times stirring between. It will not take long) or melt over double boiler. In a separate bowl mix eggs, yolks and sugar. When chocolate is melted whip in eggs. Whip in flour. Pour into 4 4 oz buttered ramekins. If making ahead store in the refrigerator (they will last in the refrigerator for several months). Place at room temperature for at least 1 hour before cooking. Bake for 13 - 15 minutes at 350*. The top should crack slightly but when pressed should feel soft in center. Remove from oven and let rest on counter for 1 minute. Serve with vanilla ice cream or whipped cream. Let Mom Enjoy!!!!!
