5 egg yolks
5 eggs
5oz sugar
18oz bitter sweet dark chocolate- roughly chopped
18oz butter
2oz flour
3-inch ramekins or disposable aluminum cups
Preheat oven to 350 degrees. Spray ramekins or aluminum cups with nonstick cooking spray. Melt chocolate and butter together. In a mixing bowl, whisk together egg yolks, eggs and sugar until smooth. Slowly add flour and mix until well blended. When chocolate and butter are fully melted, add to egg mixture while continuously whisking. Fill ramekins until batter is 1/4 inch from the top. Bake for 7 minutes. Remove from oven and let rest for 2 minutes. Turn out onto serving plate and garnish to taste. Serve immediately. Yield: 10 servings.
