Lobster, Crab, Organic Melon Salad
Serves 4
Melon
4 T ¼ inch diced yellow watermelon
4 T ¼ inch diced red watermelon
4 T ¼ inch diced cantaloupe
4 T ¼ inch diced honeydew melon
1 jalapeno 1/8 inch diced
fresh orange juice
zest and juice of one lime
1 T 1/8 inch diced red onion
All ingredients (except citrus) is available at area farmers markets. Combine all ingredients 1 hour before serving.
Lobster
1 1# lobster cooked and removed from shell
1 anahiem chili roasted peeled and julienne
1 T extra virgin olive oil
1 tsp chopped tarragon
1 tsp chopped parsley
salt and pepper
Chop lobster in ¼" pieces. Combine all ingredients and season.
Crab
6 T picked lump crab meat
½ tsp chopped parsley
2 T olive oil
zest of ¼ lemon
salt and pepper
Gently combine ingredients and season.
Assemble
Using a 2" ring mold in a bowl spoon ¼ of lobster in mold. Spoon over 1/8 of the melon mix. Layer with ¼ of the crab. Top with 1/8 of the melon mix. Repeat to make 4 servings, each in there own bowls. Drizzle with remaining juice. Serve and Enjoy!!!!!
