Bison Any cut will be fine 4 7 oz bison ny strip steaks 1 tsp thyme 2 T red wine 2 cloves garlic sliced 1 T olive oil 1 T coarse ground black pepper salt Rub steaks with garlic, thyme, wine, oil and pepper. Let marinate 1 hour. Remove from marinade. Season with salt. Grill or sauté. To prevent drying out bison should be served medium rare to medium, because of its low fat content.
Vegetables 1 # New Town Farm Bordeaux Spinach 12 New Town Farm Baby Carrots blanched and peeled 1 T garlic 1 T chopped shallots 5 T olive oil ½ cup chopped dried tart cherries Heat a sauté pan over medium heat until hot.
