Bison NY Strip Healthy Alternative To Beef
Bison
Any cut will be fine
4 7 oz bison ny strip steaks
1 tsp thyme
2 T red wine
2 cloves garlic sliced
1 T olive oil
1 T coarse ground black pepper
salt
Rub steaks with garlic, thyme, wine, oil and pepper. Let marinate 1 hour. Remove from marinade. Season with salt. Grill or sauté. To prevent drying out bison should be served medium rare to medium, because of its low fat content.
Vegetables
1 # New Town Farm Bordeaux Spinach
12 New Town Farm Baby Carrots blanched and peeled
1 T garlic
1 T chopped shallots
5 T olive oil
½ cup chopped dried tart cherries
Heat a sauté pan over medium heat until hot. Add oil. Add shallots and garlic. Toss spinach in pan. Add carrots and cherries. Season with salt and pepper. Serve on top of your sliced bison NY Strip. Enjoy!!!!!
