Hlee's Red, Pink and White Salad:
Beet and grapefruit salad bloom
2 small beets, roasted, peeled and sliced into 1/8 - 1/4 thick rounds
2 ruby red grapefruits, supremed
2 teaspoons goat cheese, crumbled
2 tablespoons extra virgin olive oil
2 1/2 teaspoon fresh squeezed lemon juice
2 teaspoon honey
Pinch of salt and ground pepper
Layer sliced beets in a circular pattern until you form a flower-like bloom. Equally space out the grapefruit supremes in a circular pattern on top of the sliced beets. Leave space between the tops of the supreme tips. Mound the goat cheese crumbles at the crown of the supremes.
Mix the last five ingredients together and drizzle lightly over the beets and grapefruits.
