Mandy's Cornish Hens With Wild Rice:
2 (1 to 1 1/2 lb.) Cornish game hens
1/2 c. chopped onion
1 tbsp. butter
1 3/4 c. chicken broth
1 pkg. Uncle Bens long grain and wild rice
1 c. shredded carrots
Melted butter
Rinse hens; cover and chill. For stuffing. Cook onion in butter until tender. Stir in with rice and seasoning follow package directions; add carrots to bake. Spoon rice mixture into 4 mounds in 13 x 9 x 2 pan Place Cornish hens cut side down over rice. Brush with melted butter. Bake covered 45 minutes at 375 degrees. Uncover. Brush hens with melted butter. Bake, uncovered, 30-35 minutes or until tender. 4 servings.
