Champagne Strawberry Poached Banana Split
Serves 2
2 organic bananas (ripe but not soft)
1 ½ cups semi sweet champagne
6 large strawberries
Cut the tops off and quarter 4 strawberries. In a pot just large enough to hold the bananas bring the champagne and cut strawberries to a boil. Reduce heat to a simmer. Add bananas. Poach bananas turning once after 3 minutes. Cook 2 more minutes. Remove bananas and reduce liquid to a syrup. When bananas have cool enough to touch cut in ½ lengthwise. Place cut side down on a plate. Place two scoops of your favorite ice cream on top. Cut remaining strawberries into fans. Leave the green tops on. Starting ¼" from the green make thin slices into the full width of the strawberries. Press to open like a fan. Place on top. Drizzle with the syrup. Serve and Enjoy!!!!!
