Cold Weather Irish Lamb Stew
Serves 4
2 # lamb stew meat
2 leeks
1 bay leaf
2 T chopped garlic
3 potatoes
2 sprigs rosemary
3 T olive oil
3 cup chicken stock, vegetable stock or water
4 T extra virgin olive oil
2 T chopped parsley
salt and pepper
In a medium sized pot sear lamb in olive oil. Season with salt and pepper. Cut leeks in ½ and cut in ¼" half moons. Wash in deep water. Do not pour out pull leeks from water leaving dirt on the bottom. Add leek, garlic and bay leaf to the lamb. Cook for 5 minutes. While cooking slice potatoes in 1/8" thick discs. Add to lamb. Add water or stock and simmer until tender. Finish with extra virgin olive oil, chopped parsley, salt and pepper. Serve in bowls or over toasted bread. Enjoy!!!!!
