Artichoke Torte

2 c artichoke Hearts, pressed (remove excess moisture)
3/4 c grated parmesan
1/2 c mayonaise
1 T thyme
1 T fine chppoed parsley
2 t ground black pepper
2 t garlic, fine minced
3/4 c bread crumbs

2 roasted red pepper
4-4 oz ramekins

oven @ 350

combine all ingredients except for roasted red peppers in a mixing bowl, mix thoroughly
using a round cookie cutter, cut circles out of red peppers to fit the bottom of the ramekins
divide artichoke mix into the ramekins
bake for 30 minutes

to serve simply turn out of the ramekins

they can be served hot or warm, as a a side or by themselves as an appetizer
if you lack ramekins, don't go out and buy them. This mix can also be baked off in a casserole. you don't even have to line it with peppers, thats more of an accoutrement, but nice. If you do bake it off in a casserole, try a round one so you can slice it into pie shaped servings...
