Sometimes it seems like there are not enough hours in the day. Just to get the time to throw something on the grill seems like a challenge.
Here’s a recipe that comes to the rescue. Five minutes of prep and half an hour on the grill. It doesn’t get any easier than that, and the clean up is a breeze.
Here’s a dump recipe, I found and tweaked, on Tasty Marshmallow that’s passed the WECT taste test.
Tonight, let’s have Honey Mustard Chicken Foil Packets.
Here’s the recipe:
1 1/2 lbs. chicken breast pieces
1 1/2 lbs. baby potatoes. Cut the larger ones.
1/3 cup honey
3 t of dijon mustard
1 t yellow mustard
1 t of salt
1/2 t Pepper
1 t Italian seasoning
1 t garlic powder
1 t onion powder
In a small bowl whisk together the honey, dijon mustard, and yellow mustard until well combined. In a second small bowl whisk together the salt, pepper, Italian seasoning, garlic powder, and onion powder.
Preheat grill to medium-high heat.
Pull off 4 sheets of foil, each about 12 inches long and spray with non stick cooking spray.
Layer the potatoes and chicken evenly in the center of the foil packets. Season the potatoes and chicken with the spice mixture. Drizzle evenly with honey mustard.
Fold the sides of the foil over the chicken and seal closed. Bake in preheated oven or on grill for 20-25 minutes. Chicken is done when internal temperature is 165 degrees.
