Tuna Tartar in Sesame Cone

Ingredients:

4 ounces              Loin Tuna, finely minced

1 tbl                       Fresh chives, finely minced

1 dash                   Kosher salt, to taste

1 tsp                      Lemon, zest

1 tsp                      Pickled ginger, finely chopped

2 tbls                     Spicy Chili Mayonnaise *Recipe Below

3 tbls                     Tobikko orange caviar, red preferred

1 dozen                 Sesame cones *Accompaniments

Instructions:

  2. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Mince fresh chives
  3. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Zest lemon
  4. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Finely chop pickled ginger
  5. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Keeping all ingredients cold mix gently to combine
  6. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Serve mixture into sesame cones
  7. style="margin-bottom:0in;margin-left:0in;margin-bottom:.0001pt;line-height:normal;">Garnish with daikon sprout and red tobiko

Spicy Chili Mayonnaise

Ingredients:

1 cup                     Extra heavy mayonnaise

3 tbls                     Siracha sauce

¼ tsp                      Sesame oil

Instructions:
