Tuna Tartar in Sesame Cone

Ingredients:

4 ounces              Loin Tuna, finely minced

1 tbl                       Fresh chives, finely minced

1 dash                   Kosher salt, to taste

1 tsp                      Lemon, zest

1 tsp                      Pickled ginger, finely chopped

2 tbls                     Spicy Chili Mayonnaise *Recipe Below

3 tbls                     Tobikko orange caviar, red preferred

1 dozen                 Sesame cones *Accompaniments

Instructions:

  1. Mince loin tuna
  2. Mince fresh chives
  3. Zest lemon
  4. Finely chop pickled ginger
  5. Keeping all ingredients cold mix gently to combine
  6. Serve mixture into sesame cones
  7. Garnish with daikon sprout and red tobiko

Spicy Chili Mayonnaise

Ingredients:

1 cup                     Extra heavy mayonnaise

3 tbls                     Siracha sauce

¼ tsp                      Sesame oil

Instructions:

  1. Combine all ingredients into one bowl and mix until combined
