Fried Chicken & Waffles

Yield:  4 Servings

Fried chicken & waffles:

For fried chicken:

4 boneless skinless chicken breast

1 cup flour

1 tsp salt

1 tsp pepper

1 cup buttermilk

Enough oil to have about 1" in a pan

1. Preheat oil. Make sure it isn't smoking. Mix flour, salt and pepper.

2. Dredge chicken in flour, shaking off excess.

3. Sip in buttermilk and allow excess to drip off.

4. Return to flour and make sure it is completely covered.

5. Gently place in pan and fry a out 3-4 minutes and flip. Cook for another 3-4 minutes.  Check internal temperature is 165 or higher. Remove from pan and allow to drain on a paper towel lined plate.

For waffles:

1 stick butter

1/2 cup sugar

2 eggs

1 cup buttermilk

1 Tbsp baking soda

3/4 cup cornmeal

1/2 cup flour

1 tsp salt

1. Mix sugar, butter and eggs.

2. Combine buttermilk, baking soda. Add to sugar mix.

3. Add flour , salt and cornmeal.

4. Mix and scoop 1/2 cup into well oiled waffle iron.
