Wild Rice & Smoked Turkey Soup

* 3 cups water

* 1Cup chicken broth

* 1 Family Size Can cream of chicken, mushroom or celery soup

* 2/3 cup wild rice, cooked

* 1 teaspoon dried thyme, crushed

* 1 teaspoon ground black pepper

* 3 cups of cooked chopped cooked turkey or chicken (about 1 pound)

* 2 cups shredded fresh spinach 


1. In a 3-1/2- or 4-quart pot, combine water, chicken broth, cream soup & thyme, and pepper.  Use a wire whisk to blend well!

2. Cover; cook on medium-low heat setting for 7 to 10 minutes at a simmer until the soup begins to slightly thicken.  Remember to  Stir frequently!

Just before serving, stir in pulled or diced turkey or chicken and spinach. Allow to simmer for and additional 5 minutes more.

In a bowl, cup or dish to your liking, spoon some pre-cooked wild rice (white rice works also) and then pour soup over the top of the rice!


Makes 6 servings.
