Broccoli Casserole

Recipe by Chef Tim Groody of Fork! Fine Dining in Cornelius. Feeds 12.

  • 24 spears broccoli laid out in a baking dish
  • 3 T chopped shallot or onion
  • 1 tsp garlic
  • 2 T butter
  • 2 T flour
  • Pinch nutmeg
  • 2 cup milk
  • 1 cup shredded cheddar
  • ¼ cup Parmesan
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cup fried onion

In a pot cook the onion & garlic in butter. When soft add flour. Cook 10 min on very low heat. Add milk slowly. Stirring to prevent lumps. Bring to a boil.

Be sure to stir frequently so not to burn. Whisk in cheese. Add salt & pepper.

Pour over broccoli. Bake at 350* for 15 minutes until golden on top. Sprinkle with fried onions. Serve and enjoy!
