(WBTV) - Barbara McKay's Fresh Apple Cake

  • 3 eggs
  • 2 cups sugar
  • 1 ½ cups vegetable oil or melted coconut oil
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 (8oz) package chopped dates
  • 1 can flaked coconut
  • 1 ½ cups pecans
  • 1 cup chopped maraschino cherries
  • 2 tsp vanilla
  • 3 cups chopped fresh apples

Beat the eggs until thick.  Gradually beat in the sugar and oil.

Combine the flour, soda and cinnamon.

Mix a little of this flour mixture with the dates to keep them from sticking.

Add all ingredients to the egg mixture.  Pour into a well-greased and floured tube pan.

Bake at 300 degrees for 1 hour and 20 minutes or until it tests done.
