SplenDishes Recipe: Bacon Mac & Cheese

Bacon Mac & Cheese

6 slices bacon, cooked and set aside
4 tablespoons all-purpose flour
2 cups whole milk (or cream)
2 teaspoons SplenDishes House Blend
Pinch of fresh nutmeg
1 pound assorted cheeses, shredded
1 pound cooked curly pasta

In a large sauce pan, melt 4 tablespoons bacon fat with 4 tablespoons flour, whisk on medium high for 2-3 minutes, and then whisk in 2 cups whole milk or cream. Continue whisking and stir in 2 teaspoons House Blend and a pinch of fresh nutmeg.
Sauce will thicken as it comes to a boil.
Fold in 1 pound of shredded cheese of your choice, and stir until melted and combined. Taste and re-season if needed.
Combine with 1 pound of cooked curly pasta. Add milk or cream if too thick and season with additional salt, if needed.
To serve, pour into a large serving bowl and crumble cooked bacon over the top.
Serves 4-6.
