(WBTV) - Modern Muffin: Pumpkin Cranberry Bread Pudding
Serves: 12 people
- 6 extra large eggs, beaten
- 8 oz. crushed pineapple, slightly drained
- 1 tsp. vanilla extract
- 4 tbsp. butter, melted
- 1 cup milk
- 1 tsp. cinnamon
- 1/3 cup sugar
- 1 pinch of salt
- 6 Pumpkin Cranberry Modern Muffins, crumbled
- 4 tbsp. all-natural preserves (your favorite flavor will do)
Preheat oven to 325 degrees.
In a large bowl, whisk together the first 8 ingredients. Fold in 6 crumbled muffins.
Place in a glass dish. Cover and bake for 35-40 minutes.
Once it's done baking, uncover and spread preserves on top, then enjoy!
