Pumpkin Cranberry Bread Pudding

Modern Muffin: Pumpkin Cranberry Bread Pudding

Serves: 12 people

Ingredients:

  • 6 extra large eggs, beaten
  • 8 oz. crushed pineapple, slightly drained
  • 1 tsp. vanilla extract
  • 4 tbsp. butter, melted
  • 1 cup milk
  • 1 tsp. cinnamon
  • 1/3 cup sugar
  • 1 pinch of salt
  • 6 Pumpkin Cranberry Modern Muffins, crumbled
  • 4 tbsp. all-natural preserves (your favorite flavor will do)

Directions:

Preheat oven to 325 degrees.

In a large bowl, whisk together the first 8 ingredients. Fold in 6 crumbled muffins.

Place in a glass dish. Cover and bake for 35-40 minutes.

Once it’s done baking, uncover and spread preserves on top, then enjoy!
