Muddled Chile Marinated Steak with Grilled Corn Butter Bean Salsa

Serves: 8

Ingredients

  • 1 poblano chile (red or green), cut small
  • 1 anaheim chile (red or green), cut small
  • 2 cloves garlic, sliced
  • 2 tbsp rosemary leaves
  • 1 tbsp parsley leaves
  • 4 tbsp NC dry white wine (Dover Vineyards, Jones Von Drehle, Raffaldini) Drink the rest!
  • 4 tbsp olive oil
  • Salt & Pepper to season
  • 8 Mills Family Farm Medallion Steaks

Method

In a mortar & pestle, crush the peppers, garlic & herb. Mix together with wine and oil. 

Using a large pan, place steaks in pan and pour marinade over the top. Let sit overnight, or for at least 6 hours. 

Heat your grill.

Season steaks liberally with salt & pepper. Grill over medium heat to caramelize the outside & to the doneness you prefer. Baste with any excess marinade.

Salsa

  • 3 ears corn, shucked
  • 2 anaheim chiles, diced small
  • ½ cup red onion, diced small
  • ½ cup cherry tomatoes, cut in ½
  • 2 tbsp chopped fresh oregano
  • 1 lime zest & juice
  • 2 tbsp extra virgin olive oil
  • Salt & Pepper to season

Grill corn until charred and cooked. Cut off the cob and be sure to scrape the cob. Mix with all other ingredients. Season. Serve salsa over the steaks.
