Road trip delights with Gypsy Soup

Summer is just around the corner. There's lots of good chances to pile into the car and head off for an adventure. Stacey Ann from Gypsy Soup stopped by WBTV News Sunday Morning to share the best ways to enjoy the road trip.

Cherry Filled Empanadas

½ cup butter
3 ounces cream cheese
1 cup flour
1 cup cherry filling, or jam
? cup sugar
½ cup milk

1. Cream together the butter and cream cheese
2. Beat in the flour. Form into a ball and wrap in saran wrap. Refrigerate for couple hours.
3. Remove dough from refrigerator 30 minutes before using. Preheat oven to 375°F.
4. Roll chilled dough thin. Using a round cookie cutter or a large mouth jar, cut into 3 to 4 inch rounds. Place small spoonful of fruit in center of each round, moisten edges with milk. Fold round over and press or crimp edges together with a fork.
5. Bake 375°F on ungreased cookie sheet 15 to 20 minutes. Immediately roll in sugar.
