Recipe: Greek Lamb Slider/Chipotle Salmon Slider

Greek Lamb Slider

Ingredients

1. 1 lb. ground lamb

2. 1 ½ tsp. paprika

3. 2 mint leaves finely chopped

4. 1/2 tsp. ground cinnamon and Kosher salt

5. ¼ tsp. pepper

6. 2 tbsp. panko crumbs

7. 1 cup baby spinach leaves

8. 1 cups crumbled feta cheese

9. Red onion thinly sliced

10. 1 tsp. each balsamic vinegar and olive oil

11. Ciabatta or favorite slider roll, sliced, lightly oiled and sprinkled with Kosher salt

Preparation

1. Mix lamb with first paprika cinnamon, salt, pepper, and panko. Make into slider sized patties.

2. Toss spinach, feta, onion, vinegar, and 1 tbsp. olive oil.

Directions

1. Preheat grill to 500 degrees for direct grilling with a zone for indirect in case of flare-up.

2. Oil grate and place burgers directly over flame, then turn 90 degrees after 2-3 minutes. Turn them over and repeat.

3. Grill rolls for 2 minutes or until sear marks on the bun.

4. Slider is medium rare at 140-145 and medium at 155-160 degrees 5. Put slider on roll, top with spinach, feta, and a dash of olive oil.

6. Optional topping with a tsp. of Tzatziki sauce

Chipotle Salmon Slider

Ingredients/Prep

1. Favorite salmon

2. Toasted sesame oil

3. Combine 1 tsp. cumin, ½ tsp. chili powder, ¼ tsp. Kosher salt and pepper, dash of chipotle seasoning

4. Mayo seasoning

a. ½ tsp. chipotle pepper, and ½ tsp. Adobe seasoning

b. ½ cup thick mayonnaise

c. Juice of 1 lime

5. Hard slider roll (or favorite slider roll), sliced brushed with olive oil and sprinkle with Kosher salt 6. Lemon wedges

Directions

1. Preheat grill to 425 degrees for direct grilling.

2. Oil grate and place directly over flame, then turn 90 degrees after 2-3 minutes. Turn fish over and repeat.

3. Grill rolls for 2 minutes or until sear marks on the bun.

4. Fish is done when it just begins to flake, squeeze lemon, cut into slider sized pieces.

5. Top with dollop of chipotle mayo sauce.

6. Optional add a slice of green lettuce, tomato, red onion, or even thin slice of pineapple

Tzatziki Sauce

Ingredients

1. Tons of garlic finely chopped

2. ½ cup diced cucumber (peeled and de-seeded)

3. 1 tbsp. olive oil

4. 2 tsp. fresh lemon juice, more to taste

5. Kosher salt and pepper to taste

6. 2 tbsp. fresh dill

7. 16 oz. Greek Yogurt

Prep (make a few hours ahead of serving)

1. Combine above ingredients without the yogurt. Then fold in the yogurt and continue to season with salt, pepper, and lemon juice to taste.

2. Let chill for a few hours.

3. Baste pita bread with olive oil, sprinkle with Kosher salt, grill until just toasted, and cut into triangles.
