Avocado Chicken Salad Sandwich

Avocado Chicken Salad:

2 cups - Cooked, cooled and diced chicken breast or thighs

2 ripe avocados

1/2 cup Basil

1/4 cup Mayo

Salt and Pepper to Taste

Sandwich Toppings:


Sliced Tomatoes

Roasted Red Peppers

Sliced Red Onion


In food processor combine, ripe avocados, basil, salt, pepper and mayo.  Blend until smooth.

In a bowl, mix avocado mixture with diced chicken.

Ready to assemble your sandwich.  Bread, Avocado Chicken Salad, Sliced Tomatoes, Roasted Red Peppers, Sliced Red Onion, Spinach
