2.5 ounces of gin or vodka
3/4 ounce of homemade lime cordial
1 lime wheel for garnish
Combine all ingredients in a shaker, shake about 15-20 times, strain into a martini or coupe glass and garnish with a line wheel.
3/4 cup of sugar
Peel all limes, gently avoid peeling the white pith, it will avoid a bitter flavor. Express the peels in a container to release the oils in a container. Then add 3/4 of a cup of sugar, and juice the the limes. Let this mixture infused for 12-24 hours (room temperature), then strain with a fine mesh strainer. Funnel into a container. I personally suggest adding a splash of vodka, it will help preserve the cordial long. Keep refrigerated, it will last for approximately 30 days.
