Carolina Blue Cheese Stuffed Meatballs

Yield:  24 meatballs

1# ground Beef

1# sausage meat

1T chopped rosemary

¼ cup cream

½ cup bread crumbs or stale bread

2 T chopped garlic

¼ cup fine chopped onion

3 T olive oil

2 eggs

2 T salt

1 T ground black pepper

3-3 oz blue cheese

In a bowl mix the cream and bread crumbs.  Let sit 10 minutes.  In a pan cook onion and garlic for 1 minute until aromatic.  Add to the cream.  Add eggs salt and pepper.  Mix in meat.  Mix thouroughly.  Form into 1”balls.  Press your finger into the center and place a a small piece of cheese in center.  Fold meat over cheese and roll into a ball.  Place meatballs on a baking sheet and bake at 450* for 12 – 15 minutes or until cheese starts to come out from the center.  Place on a platter and spoon your favorite bbq sauce over the top.  Sprinkle with coleslaw and and more cheese.  Serve and Enjoy!!!!!
