Southern Banana Pudding


1 ½ Cup SUGAR

6 Tablespoons Cornstarch

Pinch of Salt

4 ½ Cups  Whole Milk

6 Egg Yolks

4 Tablespoons Unsalted Butter

2 ½ teaspoons Vanilla

Method of preparation:

  1. In a bowl mix together sugar, cornstarch, salt and egg yolks.
  2. On medium heat in a heavy saucepan bring milk to a simmer and remove from heat.
  3. Lower heat.  Using a ladle slowly drizzle about half of the hot milk over the egg mixture while whisking constantly to prevent eggs from scrambling.  Continue until eggs have been tempered.
  4. Gradually pour new egg yolk mixture into saucepan with the milk.  Return saucepan to moderate heat and cook, whisking constantly, until thickened.  Do not let boil.
  5. Remove from heat, add butter, and vanilla.  Transfer to bowl and press plastic wrap directly onto surface.  Chill until cold, about 4 hours.
