Healthy Food Trends 2016: Herbs

Berries & Mint Delight 
1 cup blueberries 1 cup raspberries 
¼ cup fresh mint, chopped 
3 Tablespoons lemon juice 
Optional; ¼ cup yogurt 


1. In a medium bowl, mix the lemon juice & mint 
2. Add yogurt, if you like, to the dressing 
3. Place berries on a platter 
4. Drizzle topping over berries 
5. Chill for 1 hour 

2 Bean Salad 
1 ½ cups northern white beans 
1 ½ cups red kidney beans 
½ cup chopped red onion 
¼ cup olive oil 
3 Tablespoons red wine vinegar 
1 Tablespoon fresh chopped oregano 
Salt & pepper 
Dash of either crushed red pepper, or cayenne 


1. In a large bowl, toss beans with onion 
2. In a medium bowl, whisk oil & vinegar & herbs 
3. Pour dressing over salad, let set for an hour
