Sweet Potato Cornbread

Yield: 6 People   

Ingredients: 1 Sweet potato (mashed)

½ cup of sour cream

¼ cup cane sugar

1 egg

1 ½ cup buttermilk

½ cup agave nectar

2 cups of cornmeal

1 tablespoon of baking powder

Mise en place:

 1. Roughly chop one sweet potato and place in boiling hot water for about 20 minutes until soft.

2. Once the sweet potatoes are soft, mash about a handful of sweet potatoes in a bowl.

3. Add the 1 egg, sour cream and whisk until incorporated.

4. Add all the rest of the ingredients and mix until well incorporated.

5. Place in a ½ inch deep sprayed pan and place mixture in pan

6.  Bake in an oven at 425 for about 30 minutes

7. Enjoy and then do the happy food dance!!!
