Kid-Friendly Kale Salad Recipe

FoodCorps is a national service program that connects kids to healthy food in schools, helping students plant school gardens and learn fun new recipes that help them incorporate fresh fruits and veggies into their diets. 

Their lessons also include cooking and taste testing for their cafeterias' menus. On WBTV News Sunday Morning Katie McCrea, FoodCorps Service Member, Carter Legend and Jada McCray, Students at Barringer Elementary stopped by share kid-approved recipes for your Thanksgiving menus. 


Kid-friendly Kale Salad Recipe: 
 
Ingredients:
3 cups kale
1 tbs olive oil
2 teaspoon apple cider vinegar
1/4 tsp. salt 
Crasins
Pumpkin seeds
Diced Apple
 
Method:
1. Tear kale into bite sized peices, add to large ziplock bag
2. Add olive oil, apple cider vinegar, and salt to bag
3. Massage bag until kale is tender
4. Add toppings: crasins, apples, pumpkin seeds
5. Enjoy!
