"French American" Macaroni & Cheese

  • 1 ½ cups whole wheat rotini.
  • 1 ½ lb muenster cheese.
  • 1 ½ cup of skim milk.
  • ½# low fat cream cheese.
  • ½ cup fresh diced tomatoes.
  • Grated manchego for garnish.
  • ½ cup panko or bread crumbs.
  • ½ bunch of Italian flat leaf parsley.
  • 1 T EVOO
  • Pepper TT
  • Adobo TT
  • Ms. Dash garlic TT or fresh garlic put in pot with milk & cream cheese

Steps for preparation

  1. Preheat oven to 350
  2. Gather all ingredients and measure them out
  3. Dice whole tomato, remove seeds
  4. Bring a pot of water to bowl.  While this is heating up, melt cream cheese and skim milk together in a pot on low to medium-low heat.  Add pepper, adobo seasoning, & Ms. Dash* garlic salt free to.  Season TT
  5. Once liquid is hot remove from heat & add in muenster cheese

Optional*: add fresh garlic to pot cook to release flavors then remove

  1. Add the rotini to water
  2. Cook until almost al dente
  3. Strain in colander.  Drizzle with EVOO
  4. Combine the pasta, cheese, & 2 tablespoons of minced parsley in the pot.
  5. Sprinkle bottom of pan with ¼ cup bread crumbs.
  6. Add pasta mixture to dish.  Sprinkle the rest of the breadcrumbs on top of the mac & cheese
  7. Bake until done or until most of the milk has been absorbed and mac & cheese is firm but not dry
  8. Garnish with manchego and parsley
