Spiced Saki Sangria

1.5 oz Mulled Wine (see second set of directions)
1 oz Dry Sake 
1 oz Orange Juice
1 oz Pineapple 
1 oz Fresh Apple 
4 Fresh Blueberries 
1.5 Fresh Strawberries chopped
Soda float

1.    Pour Mulled wine into mixing glass with strawberries, apples and blueberries. Muddle completely until everything is crushed up. 
2.    Add sake, orange juice and pineapple juice, cover with ice and shake for 5-10 seconds.
3.    Pour the contents in all into a tall Collins glass or large wine glass and float with soda water.

Mulled Wine
1 bottle of red wine (Big Jammy Zinfandels work very well)
1 cup Brandy 
1 cup Honey 
1 whole star anise 
1 whole orange 
1 whole lemon 
1 Tbl Whole Szechuan Peppercorns 
1 Tbl Ground Cinnamon
1 ts Ground Allspice
1 ts Ground Nutmeg
1 ts Ground Clove

Place all in a pot and bring to a low simmer for 20 min. Cool in fridge over night to let the flavors meld together then strain through fine mesh or cheese cloth into an empty bottle
