Betty Feezor's Carolina Delight; like a no-bake but much better!


Our “Newsroom Mom”, Susan Hancock, got her first Betty Feezor cookbook recently. She’s been putting together some of the classics and enjoying carrying on and sharing the legacy of Ms. Betty.

This a great recipe to make heading into a holiday weekend.
That Betty knew what she was doing.  This is a No-Bake recipe with coconut and nuts!  (I used cashews!)
From Betty Feezor's Carolina Recipes Volume II.

Carolina Delight

  • 2 cups sugar
  • 1 stick butter
  • 1/2 cup milk
  • 1/4 cup cocoa
  • 1/2 cup peanut butter
  • 3 cups quick cooking oats
  • 1/2 cup nuts
  • 1 cup coconut

Mix sugar, butter, milk and cocoa in a saucepan.  Bring to a boil and boil for 2 minutes.  Add remaining ingredients.  Mix well.  Drop from a teaspoon on buttered platter or pour into a 9x13x2-inch pan to set.  Cut into squares.

Betty adds...  

This recipe requires no baking.  It works very well for kindergarten groups.  If you would like to demonstrate some cooking procedure, try this one.  You can melt the butter in a saucepan on a hot plate, mix the cookies right in the saucepan, then let the children help drop them on a cookie sheet.  They are good made the conventional way in your kitchen too.
