Spiced Fig Cheesecake with Roasted Hazelnuts and Port Gastrique


1 1/2 lbs soft cream cheese

2 1/4 cups sugar

2 1/4 cups half & half

1 tbsp. cinnamon

1 tsp. ground cloves

Dash of ginger

Dash of vanilla

3 cups chopped, dried ?gs (Sam uses Black Mission Figs) 1 cooked pie crust


Cream the sugar and cream cheese until ?uffy, while scraping the bowl. Slowly add the half & half, continuing to scrape the bowl. Set aside. Sprinkle ?gs over the cooked pie crust, then pour cheesecake batter over the ?gs. Swirl in ?g jam.

Port Gastrique


1/2 bottle of Port

1 cup sugar

3 vanilla beans Pinch of ginger

3/4 cup white balsamic vinegar


Place all ingredients in a pot, reduce until slightly thicker (should be the same consistency as warm syrup). As it cools, the gastrique will continue to thicken
